Ingredients
  • 2 pounds of beef stew meat, cut into 1-inch cubes
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 medium potatoes, cubed
  • 1 red bell pepper, chopped
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 1 can (14.5 ounces) diced tomatoes
  • ¼ cup tomato paste
  • ¼ cup red wine vinegar
  • Salt and pepper to taste
  • Sour cream for garnish (optional)
Instructions
  1. Place the beef cubes in the slow cooker.
  2. Add the chopped onion, minced garlic, carrots, potatoes, and red bell pepper.
  3. In a separate bowl, mix the paprika, caraway seeds, diced tomatoes, tomato paste, and red wine vinegar. Pour this mixture over the meat and vegetables in the slow cooker.
  4. Cover and cook on LOW setting for 8-10 hours, or on HIGH setting for 4-5 hours, until the meat is tender and the flavors are well combined.
