Ingredients
2poundsof beef stew meatcut into 1-inch cubes
1large onionchopped
2clovesgarlicminced
2medium carrotssliced
2medium potatoescubed
1red bell pepperchopped
2tablespoonspaprika
1teaspooncaraway seeds
1can14.5 ounces diced tomatoes
¼cuptomato paste
¼cupred wine vinegar
Salt and pepper to taste
Sour cream for garnishoptional
Instructions
Place the beef cubes in the slow cooker.
Add the chopped onion, minced garlic, carrots, potatoes, and red bell pepper.
In a separate bowl, mix the paprika, caraway seeds, diced tomatoes, tomato paste, and red wine vinegar. Pour this mixture over the meat and vegetables in the slow cooker.
Cover and cook on LOW setting for 8-10 hours, or on HIGH setting for 4-5 hours, until the meat is tender and the flavors are well combined.
Season with salt and pepper to taste.
Serve warm, garnished with a dollop of sour cream, if desired.
