Ingredients

  • 2 pounds of beef stew meat cut into 1-inch cubes
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 medium potatoes cubed
  • 1 red bell pepper chopped
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 1 can 14.5 ounces diced tomatoes
  • ¼ cup tomato paste
  • ¼ cup red wine vinegar
  • Salt and pepper to taste
  • Sour cream for garnish optional

Instructions

  • Place the beef cubes in the slow cooker.
  • Add the chopped onion, minced garlic, carrots, potatoes, and red bell pepper.
  • In a separate bowl, mix the paprika, caraway seeds, diced tomatoes, tomato paste, and red wine vinegar. Pour this mixture over the meat and vegetables in the slow cooker.
  • Cover and cook on LOW setting for 8-10 hours, or on HIGH setting for 4-5 hours, until the meat is tender and the flavors are well combined.
  • Season with salt and pepper to taste.
  • Serve warm, garnished with a dollop of sour cream, if desired.
