Amazing Veggies Lentil Soup – Get The Dutch Oven Ready!
When it comes to cooking, the Dutch oven (sometimes called French Oven) is the workhorse of the kitchen. It is exactly what you want for cooking long braises and stews and soups, ideal for one pot meals. It’s what my grand-mother used long before the Crock Pot.
And today we’re making an easy but delicious Vegetable lentil soup:
Start by finely chop the onions, carrots, potatoes.
Drop everything in the dutch oven:
Add lentils, fire roasted tomatoes diced and vegetable broth.
Cover and cook on low for 2 hours.
Chop the spinach,
add them in the dutch and stir well.
Cover and cook 5 more minutes.
It’s beautiful and ready, season with salt and pepper to your taste and serve.
