You can use regular potatoes or red potatoes, or simply the ones you already have in the kitchen.

Ingredients
  • 2 potatoes, sliced (you can use red potatoes too)
  • ½ c. onions, chopped
  • ½ c. celery sliced
  • ¼ c. green peppers, diced
  • ¼ c. vinegar
  • ¼ c. oil
  • Chopped parsley
  • Sliced bacon, cooked and crumbled
Instructions
  1. Combine all ingredients except parsley and bacon.
  2. Add salt and pepper to taste.
  3. Stir and cook for 5-6 hours in Crock Pot.
  4. Add sugar if needed.
  5. Garnish with bacon and parsley.
