Ingredients
  • 1 onion, quartered
  • 3-inch piece of fresh ginger, sliced
  • 4 cloves garlic, smashed
  • 4 cups chicken broth
  • 4 cups water
  • 2 boneless, skinless chicken breasts
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 cinnamon stick
  • 3 whole star anise
  • 1 tsp coriander seeds
  • 4 green onions, sliced
  • 8 oz rice noodles
  • Optional toppings: bean sprouts, Thai basil, lime wedges, jalapeño slices, hoisin sauce, sriracha sauce
Instructions
  1. In a slow cooker, combine the onion, ginger, garlic, chicken broth, water, chicken breasts, fish sauce, soy sauce, brown sugar, cinnamon stick, star anise, and coriander seeds.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours or until the chicken is cooked through and tender.
  3. Take the chicken out of the slow cooker and slice it or shred it with two forks if you like it this way.
  4. Using a fine-mesh filter, strain the broth and discard the solids.
  5. Return the broth to the slow cooker and add the chicken and green onions.
  6. Cook the rice noodles as directed on the packet.
  7. Divide the cooked noodles among serving bowls and ladle the chicken and broth over them.
  8. Serve hot, garnished with bean sprouts, Thai basil, lime wedges, jalapeño slices, hoisin sauce, and sriracha sauce, if desired.
Notes
Alternative Ingredients:
Instead of boneless, skinless chicken breasts, you can use bone-in chicken thighs or drumsticks.
You can substitute vegetable broth or beef broth for the chicken broth.
Instead of fish sauce, you can use soy sauce or tamarin.
You can substitute honey or maple syrup for the brown sugar.
Instead of coriander seeds, you can use ground coriander or omit it.
