Ingredients

  • 2 lbs pork tenderloin
  • ¼ cup soy sauce
  • ¼ cup balsamic vinegar
  • 3 cloves garlic minced
  • 1 tbsp brown sugar
  • ½ tsp each salt and pepper
  • ½ tsp dried thyme
  • ½ cup chicken broth

Instructions

  • Place the pork tenderloins in the slow cooker.
  • In a small bowl, combine all the remaining ingredients except the chicken broth to make the marinade.
  • Pour about three-quarters of the marinade over the pork, reserving the rest for the sauce. Pour the chicken broth around the tenderloins.
  • Cover and cook on LOW for 3 to 4 hours, or until the thickest part of the pork reaches an internal temperature of 145°F.
  • For a lightly caramelized finish, transfer the cooked tenderloins to a foil-lined baking sheet and broil for 2 to 4 minutes, watching closely so the surface browns without drying out.
  • Remove the pork from the oven and let it rest for 10 minutes before slicing.
  • Meanwhile, pour the slow cooker juices into a saucepan. Whisk in the reserved marinade and simmer over medium heat until the sauce reduces slightly and thickens.
  • Slice the pork tenderloin and serve it with the warm sauce spooned over the top.

Notes

Note: Pork cooked to 145°F may retain a faint blush in the center. That is normal. The short broiling step adds color to the outside, while resting allows the meat to finish gently without becoming dry.
