  • 4 bone-in pork chops 1-inch thick - trust me, bone-in makes a difference in flavor!
  • 1½ cups chicken broth homemade if you've got it, store-bought works great too
  • 2 tablespoons olive oil
  • 1 medium onion sliced into rings
  • 4 cloves garlic minced (or 1 tablespoon pre-minced if you're in a hurry)
  • 2 tablespoons butter cut into small pieces
  • 1 tablespoon cornstarch for thickening the sauce
  • Fresh herbs for garnish parsley and rosemary sprigs
  • For the Perfect Golden Sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon brown sugar helps with caramelization
  • ¼ cup heavy cream optional, but makes the sauce extra silky
  • The Secret Seasoning Mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika regular works too, but smoked adds magic!
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried rosemary

Instructions

  • Let's Get Cooking!
  • Prep Your Seasoning (5 minutes)
  • Mix all your seasonings in a small bowl. I like to make extra and keep it in a jar for next time!
  • Season Those Chops (5 minutes)
  • Pat your pork chops dry with paper towels (this is crucial for a good sear!), then rub them generously with the seasoning mix. Don't be shy - really get it in there!
  • Optional but Worth It: The Sear (5 minutes)
  • Heat olive oil in a large skillet over medium-high heat. Give each pork chop a quick sear, about 2-3 minutes per side. This adds a beautiful color and extra flavor.
  • Prep the Crock Pot (5 minutes)
  • Layer your sliced onions at the bottom of the crock pot. This creates a flavor-packed bed for your pork chops.
  • Layer and Let It Cook
  • Whisk together chicken broth, Worcestershire sauce, Dijon mustard, and brown sugar
  • Place the pork chops on top of the onions
  • Add minced garlic around the chops
  • Pour the liquid mixture over everything
  • Dot the top with butter pieces
  • Cover and cook on low for 4-6 hours or high for 2-3 hours

  • Remove the pork chops and keep them warm

  • Whisk cornstarch with 2 tablespoons of cold water
  • Stir into the cooking liquid
  • Add heavy cream if using
  • Cook on high for 10-15 minutes until thickened
  • Taste and adjust seasonings
  • The sauce should coat the back of a spoon but still flow beautifully
