Ingredients
6large potatoespeeled and cubed
1onionchopped
3clovesgarlicminced
4cupschicken broth
1cupheavy cream
1cupshredded cheddar cheese
6slicesbaconcooked and crumbled
1tspsalt
½tspblack pepper
½tspdried thyme
¼cupchopped fresh parsley
Instructions
In a large slow cooker, combine potatoes, onion, garlic, chicken broth, heavy cream, salt, black pepper, and thyme. Stir well to combine.
Cook on low for 4-6 hours or on high for 3-4 hours.
Once the potatoes are tender, use an immersion blender to blend about half of the soup until smooth. Alternatively, transfer half of the soup to a blender, blend until smooth, and return to the slow cooker.
Stir in shredded cheddar cheese and cook on low for an additional 10-15 minutes or until cheese is melted and smooth.
Serve hot, garnished with crumbled bacon and chopped fresh parsley.
