Ingredients

  • 6 large potatoes peeled and cubed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ¼ cup chopped fresh parsley

Instructions

  • In a large slow cooker, combine potatoes, onion, garlic, chicken broth, heavy cream, salt, black pepper, and thyme. Stir well to combine.
  • Cook on low for 4-6 hours or on high for 3-4 hours.
  • Once the potatoes are tender, use an immersion blender to blend about half of the soup until smooth. Alternatively, transfer half of the soup to a blender, blend until smooth, and return to the slow cooker.
  • Stir in shredded cheddar cheese and cook on low for an additional 10-15 minutes or until cheese is melted and smooth.
  • Serve hot, garnished with crumbled bacon and chopped fresh parsley.
