Ingredients

  • 4 boneless skinless chicken breasts (about 2 pounds) – pick plump ones!
  • 4 cloves garlic minced (or more if you're a garlic fiend like me)
  • 2 cups heavy cream go on, treat yourself
  • 2 cups chicken broth homemade if you're fancy, store-bought if you're normal
  • 8 oz cream cheese cubed (trust me on this one)
  • 1 cup grated Parmesan cheese the good stuff, not the powdery kind
  • 2 teaspoons Italian seasoning or raid your spice cabinet and make your own blend
  • 1 teaspoon salt plus more to taste
  • 1 teaspoon black pepper freshly ground if you're feeling extra
  • 16 oz fettuccine or pasta of choice I won't judge if you use penne
  • Fresh parsley chopped, for garnish (because we're fancy like that)

Instructions

  • First things first, let's get that slow cooker ready. Give it a little spray with cooking oil if you're worried about sticking.
  • Now, lay those chicken breasts in the bottom of your slow cooker. They're about to go on a flavor journey!
  • In goes the minced garlic (don't be shy), heavy cream (liquid gold), chicken broth, cream cheese, Parmesan, Italian seasoning, salt, and pepper. It's like a party in your slow cooker!
  • Give everything a good stir to make sure the chicken is well-coated. It's like tucking them into a creamy, flavorful bed.
  • Pop the lid on and let it cook on LOW for 3-4.5 hours or on HIGH for 1.5-2.5 hours. The chicken should be incredibly tender, so much so that it practically falls apart at a mere glance..
  • After the chicken is done cooking, remove it from the pot and use two forks to tear it into shreds. It should come apart effortlessly, even more so than your coziest sweater.
  • Place the shredded chicken back into the slow cooker and then mix in the pasta. Give it all a good stir to make sure the pasta is swimming in that delicious sauce.
  • Cover and cook on HIGH for another 30-40 minutes, or until the pasta is al dente. Give it a stir every now and then to make sure everything's cooking evenly.
  • Once the pasta is cooked to perfection, give it one final stir to make sure everything's well combined.
  • Sprinkle with fresh parsley because we're all about that pop of color and freshness!
