Alternative ingredients:
2 pounds beef stew meat (can be substituted with alternative protein sources like chicken thighs or pork shoulder)
1 (10.75-ounce) can cream of mushroom soup (consider using a homemade mushroom sauce or coconut milk for a dairy-free option)
1 (1.61-ounce) packet brown gravy mix (see note) OR substitute with 2 tablespoons flour (gluten-free flour if needed) mixed with 1 cup beef or vegetable broth
1 beef bouillon cube (replace with 1 teaspoon beef bouillon powder or use 1 cup homemade beef or vegetable broth)
1 cup water (can be substituted with red wine, beef broth, or vegetable broth for additional flavor)
1 small onion, chopped (replace with shallots or leeks for a milder flavor)
How to:
In the bowl of a 4-quart slow cooker, combine the alternative protein source (chicken thighs, pork shoulder, or other preferred meat) with the chosen sauce or alternative (homemade mushroom sauce, coconut milk, or other desired sauce).
If using the gravy mix alternative, omit the packet and instead whisk together 2 tablespoons flour (or gluten-free flour) with 1 cup beef or vegetable broth until smooth. Add this mixture to the slow cooker.
Crumble and add the beef bouillon cube (or use 1 teaspoon beef bouillon powder) to the slow cooker.
Replace the water with red wine, beef broth, or vegetable broth for additional flavor.
Add the chopped onion (or substitute with shallots or leeks) to the slow cooker.
Mix all the ingredients together until well combined.
Cook covered on low for 7 to 8 hours or until the meat is tender and cooked through.
Serve the flavorful meat and sauce over hot white rice (or substitute with cauliflower rice or quinoa for a low-carb alternative).
Garnish with fresh herbs such as parsley or chives, if desired.
If you can't find the larger packet of brown gravy mix (one that makes 2 cups of gravy) then you can use two smaller packets.
Adjust the seasoning to taste with salt, pepper, and additional herbs or spices if using a homemade sauce or alternative. For added flavor and nutrition, add vegetables such as mushrooms, carrots, or bell peppers to the slow cooker.
