Ingredients
  • 1 pound dried navy or pinto beans
  • 6 cups water
  • ¼ pound salt pork, diced
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 1 large green bell pepper, chopped
  • 1½ pounds chuck steak, cubed
  • 1½ teaspoons salt
  • ½ teaspoon oregano, crumbled
  • ¼ teaspoon red pepper
  • ¼ teaspoon ground cumin
  • 8 ounces tomato sauce

Instructions
  1. Rinse your beans well. Combine them with water in a large kettle.
  2. Bring to boiling, cover and cook for 2 minutes.
  3. Remove from heat and let stand for one hour
  4. Then pour into the crockpot.
  5. Brown salted pork in a large skillet
  6. Move the pork with a slotted spoon to the crockpot
  7. Sauté onion, garlic and green pepper in pan drippings,
  8. Then move with a slotted spoon to slow cooker.
  9. Brown your beef, a few pieces at a time in pan drippings.
  10. Put them into the crock pot with slotted spoon
  11. Add salt, oregano, red pepper, cumin and tomato sauce.
  12. Pour more water if necessary, to bring liquid level above beans.
