Ingredients
2 pounds boneless, skinless chicken breasts
2 carrots, sliced
2 celery stalks, sliced
1 onion, diced
3 cloves of garlic, minced
4 cups low-sodium chicken broth
8 ounces whole grain noodles
2 tablespoons chopped fresh parsley
Salt and pepper to taste
Instructions
Place the chicken breasts in the crockpot and add the sliced carrots, celery, diced onion, and minced garlic.
Pour in the low-sodium chicken broth and season with salt and pepper.
Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
Add the whole-grain noodles to the crockpot and stir to combine. Cook on high for 30 minutes or until the noodles are tender.
Serve the healthy chicken and noodles hot, garnished with chopped fresh parsley.
